First and foremost there is where I get my name sake from,
Masamune Shirow's APPLESEED.

Appleseed is a futuristic story about two LAPD police officers, Brieroes and Deunan, who are taken to a "Paradice" island called Olympus. Well, they soon find out all is not well in paradice. In my humble opinion it is the best manga (japanese comic books/non-video art) that has ever comeout of Japan. Unfortunatley, only the first four books have been released in the U.S. There are this six more books onver in Japan.
The Appleseed anime was creditable, I would suggest checking it out at your local video store.

Quite possibly the most popular anime to ever come out of Japan, till now and beyond, is

SUPER DIMENTIONAL FORTRESS MACROSS.

When this was released in the early eighties, it created a phenomina that hasn't stopped yet. With sequals like DYRL:2012 (Do You Remember Love), Macross Plus, and the 100+ episode series Macross 7.
American audiences may know Macross by another name, Robotech. Robotech was an 84 episode series trilogy that combined Macross with two other cartoons. The not so popular Super Dimentional Calvary Souther Cross, and Genesis Climber M.O.S.P.E.A.D.A.
Robotech is still very popular, is caries on in a multitude of manga spin-offs.

Rei Ayanami. Quite possbily the most popular female anime character ever. Neon Genisis Evangelion. Surpassing even Lynn Minme from Macross / Robotech! I'm not going to spoil it for you if you haven't seen the series, to find out get the tapes, or DVD (if it's out, I'm sure it is somewhere).
 
 

Besides breakthrough animation, these shows had another thing, soundtracks. In Japan, they have an entire music industry for Anime music. The singers for catoons are just as popular as music stars here in the U.S.
